Ce vei face

1. Introduction to Piedmontese cuisine and who we are.
2. Usually we start by prepping the dishes, however because our new safety measures some of the prep will be done ahead of time.
3. For safety participants will be on one side of the island counter and we will be on the other side. All ingredients, utensils and cookware will be laid out. Rina will demonstrate how to prepare and dish and then it’s all your hands-on, with her guidance of course.
4. First we usually prepare of dolce, as this needs time to set. It can be fondant, semifreddo, panna cotta, or even Rina's famous cheese cake.
5. Then we prepare the antipasti course.
6. Next the pasta making session (the favourite part), mixing the dough by hand, rolling through the Imperia machine to prepare both tajarin and raviolis. Hand-fill the raviolis.
7. Now time to open a bottle of Prosecco!
8. Instruction on how to prepare the secondi piatti, normally a meat dish but we can of course cater for vegetarians (Rina's husband Tim is one) plus preparation of the vegetable side dishes.
9. Finally you sit down to eat the meal accompanied by local Roero wines. Tim is a retired winemaker and historian and will tell you everything you need to know about our Piedmontese wines and more.

(Rina) I started cooking at 8 years old for my family of 10 in rural Philippines using a simple 3 stone stove. Over the years I have evolved from an intuitive cook into a great Piedmontese cook, and my traditional upbringing (Asian & Spanish culture) creates a two-in-one east to west cuisine. Creations from old traditional dishes to modern and sophisticated - more than a home cooked meal, using organic vegetables from kitchen garden picked according to the dish. When we opened our old B&B, we offered simple home-cooked dinners and after years of cooking for hundreds of guests, we decided to offer informal cooking classes, as our guests wanting to know and see the food being prepared. In 2007 we started offering cooking classes, which were enthusiastically received. We continue this tradition in our new home with a custom kitchen
