Guided by myself, an authentic sushi chef of Japanese-descent, you will learn by way of a step-by-step demonstration, how to make sushi. You will also learn about the background and history of the concept of sushi itself, the intricacies of preparing the ingredients to the highest standard, and ensuring the freshest outcome. You will learn in a very hands-on fashion, how to make California Rolls, Hand Rolls and the three different types of Nigiri Sushi. The food you make is also the food you will get to enjoy. The duration will be approximately 1.5 - 2 hours, depending on the size of your group. The price displayed is for a group of 1-3 persons (same amount of prep and ingredients involved for 1-3 persons). From 4-6 persons, this will incur an additional charge, and from 7-10 persons, another. We can host groups of any size. These sushi classes can be for smaller or larger groups and we are able to design a class that can specifically meet your needs. Hosting dates that are not in our calendar is possible on request, if we have sufficient advance notice to make the proper preparations. Although we typically host the class in my personal culinary kitchen, we are able to host it at almost anywhere. You will not be disappointed by this unique approach and very high standard to the art of sushi-making, from the perspective of a Japanese-born sushi chef.

I have been a professional chef for over three decades. Thirty years ago, I was invited to move from Japan to South Africa to assist as a chef in a Japanese restaurant. Throughout my career, I have remained loyal to my Japanese roots, catering for various Japanese companies who seek my sushi-making skills. I have also worked for well-known restaurants like Koi in Johannesburg and Wakame in Cape Town, assisting in setting them up, creating their signature dishes and training the staff. In 1977, I attended Ise Cho-Rishi Gakko Chef’s School in Japan where I studied French cuisine. I was particularly attracted to nouvelle cuisine because of its aesthetic appeal as well as for its complexity and subtlety of flavours. After that, I studied Japanese cooking, which included the fascinating art of sushi-making.
