スープはとんこつである。注文は食券、味・麺の堅さ等（下記詳述）はオーダー用紙を使用する。 また、海外からの観光客向けに英語・中国語・韓国語のオーダー用紙がある。 福岡のキャナルシティ博多店及び天神西通り店では「重箱どんぶり」が採用されており、更にキャナルシティ博多店では、究極の酸味の「あり」か「なし」が選択できる。
